Greek Yogurt Pasta

A delicious alternative to Alfredo

A tangy, simple pasta with more protein and less fat than Alfredo sauce. The greek yogurt creates a surprisingly cheesy flavour!

Ingredients:

  • Pasta (fettuccini, spaghetti, etc.)
  • Greek yogurt
  • Onions
  • Olive oil
  • Salt
  • Pepper
  • Garlic (optional)
  • Parmesan cheese (optional)

Carmalize a bunch of onions (4-5 medium onions (add 2 cloves of garlic if desired)) while bringing pasta water to a boil

Cook pasta according to instructions, keep a little pasta water (half a cup or so) and strain pasta

While pasta is straining spoon a good amount of plain greek yogurt into pasta pot, mix with a bit of pasta water and heat until warm and smooth

Return pasta to pot and mix with sauce, add caramelized onions

Plate with a healthy amount of fresh ground pepper (and parmesan cheese if desired) and enjoy!
